Yum Yum!

I just found this recipe for sweet potato muffins and thought I had to share. I love this one becuase you can use sweet potatoes or pumpkin, which happens to be one of my favs. Since the holidays are coming up, I'm SO in muffin mode. LOL!!! I always love serving a variety of muffins during dinner and the next morning. I'm getting all my stuff together to get baking to try them out so I can make them again. :o)

Sweet Potato Muffins presented by The Brewster Inn

1 1/4 c uncooked oats
1 C flour
1/3 C chopped walnuts
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp nutmeg
1/2 tsp cloves
1 tsp cinnamon
1/2 tsp salt
1 C mashed sweet potato or canned pumpkin
3/4 C brown sugar
1/2 C oil
1/4 C milk
1 egg1 tsp vanilla

Topping:
1/4 C oats
1/4 C flour
1/4 C brown sugar
3 tbs chopped pecans or walnuts
1 tsp cinnamon
1/4 C butter

Combine dry ingredients, add moist ingredients. Stir until just moistened; do not overmix.
Fill greased or paper-lined muffin tins 2/3 full. Sprinkle with topping. Bake at 400 degrees 15-20 minutes. Makes 18-20 medium muffins.
